Make Yummy Desserts with Nutricook Electric Cooker

Cooking dinner, making sandwiches or soups seem easy. We have no problem with making them. However, we feel extremely challenged when we want to make dessert. The simplest cake seems like Mount Everest compared to cooking rice or roasting a chicken. But did you know you can make desserts like a pro using a Nutricook Electric Cooker? Yes – it is not for savory foods only, but for sweet desserts as well. Here are some mouth watering recipes to surprise your family with! 

Cookies and cream fudge

For this recipe you’ll need: 

  • 1 cup of sugar. 
  • 1/3 cup of water. 
  • 1 stick of butter. 
  • 2 cups of white chocolate chips.
  • 1 cup of powdered milk.
  • Crushed cookies

How to make it? 

In your Nutricook Electric Cooker, mix 1 cup of sugar with a third of a cup of water. Set your smart pot to 11 minutes of high pressure cooking. Make sure the lid is locked well. When the timer goes off, quickly release the pressure. 

Remove the lid, and add in the butter. It should be room temperature and chopped. Along with 2 cups of white chocolate, 1 cup of dry milk powder, and a teaspoon of vanilla extract. Mix it all together well. You can add a pinch of salt to make all the flavor pop.

Take about 15 cookies and chop them. You can use Oreos, Walkers, or anything you prefer. 

Fold the chopped cookies into the mixture, and pour it into a pan covered with parchment paper. Smooth the mixture by tapping the pan on your counter or with a spatula. 

You can be a little creative and add in milk or dark chocolate chips instead. And replace the cookies with almonds or pecans. 

Anything cake 

What most mums don’t know about Nutricook Electric Cooker is that it has an option customized for cakes. All you need is a mold that fits into your smart pot. Here, we will give you a basic recipe for a vanilla cake. But you can add your own twist to it. Like adding cocoa powder, orange juice and zest, or making a special filling or ganache. 

You’ll need:

Dry ingredients: 1 cup of flour, ½ tablespoon of baking soda and baking powder. And a pinch of salt. 

Wet ingredients: ½ cup of melted butter or oil, 2 eggs, 1 cup of sugar. And ½ tablespoons of vanilla extract. 

Instructions:

Mix the wet ingredients in a bowl. Start with the eggs and sugar. Then add in the melted butter or oil followed by the vanilla extract. Make sure everything is mixed very well. 

In a separate bowl, mix the dry ingredients thoroughly. Then add them gradually to the wet ingredients. Fold the dry ingredients in the wet ones using a spatula. This way your cake will be fluffy. 

Pour the cake batter into a buttered mold, and cover it with aluminum foil. Using a fork, make holes on the aluminum foil, about 5 or 6. This way your cake will rise while also releasing the steam. 

Place the rack in your Nutricook Electric Cooker – it is usually included at purchase. And add in about ½ a cup of water. Then, add your cake into the smart pot. Lock the lid, and leave the vent open. 

Set your smart pot to Cake, and use normal heat. It will probably need about 8-11 minutes.

Cheesecake 

Ingredients

Crust: a cup of crushed cookie, 2 tablespoons of sugar, 4 tablespoons of melted butter, a pinch of salt. 

Filling: 2 bars of cream cheese (about 450 grams), and about ¾ of a cup of sugar. 2 eggs, a pinch of salt and ¼ cup of sour cream. One and a half tablespoons of vanilla extract and the same amount of fresh lemon juice. 

Topping: You can use any type of berries (blueberries or strawberries) canned or cooked with 1 tablespoon of lemon juice. 

How to make it? 

The crust: 

Mix in your crushed cookies with the sugar, butter, and a pinch of salt. Get your springform pan, place a piece of parchment in it, and butter the whole pan. Make sure to get the sides and the piece of parchment. You can also use cooking spray instead. Then, spread your crust in it and make sure it’s all even. 

Place it in your freezer for about 15 minutes. In the meantime, you’ll be making your cheesecake filling. 

Cheesecake filling: 

First, you will need a big bowl and an electric mixer. Also, make sure all your ingredients are room temperature. In your bowl, add in the cream cheese and mix it well until it is smooth and fluffy. Then, add in the sugar and mix again until both are well combined. After that, you can add in the rest of your ingredients. Including lemon juice, vanilla extract, a dash of salt, eggs, and sour cream. Again, make sure all your ingredients are room temperature. Mix everything together for about 1-2 minutes and you are good to go. Pour in the filling over the crust, even it out, and cover it with aluminum foil. 

To cook it, add 2 cups of water into your smart pot, place the rack, and then the cheesecake mix on top of it. Pressure cook on high, for about 35 minutes. Leave the cheesecake in after the timer goes off for about 15 minutes. This will let the pressure release gradually, and your cheesecake will be perfectly baked. 

When your cooker is cool, remove the cheesecake from it and cool it in the fridge for at least 4-6 hours or overnight. 

Topping: 

You can either use canned toppings, or you can make your own. Just mix in your choice of berries with some lemon juice in a saucepan. You can add part crushed berries and part whole berries. Leave it simmer until the berries are soft, then set it to cool completely. 

Ganache your cheesecake with the cooled topping and enjoy!
