Make it tonight! Healthy chicken meatballs – Toddler approved!

Constantly trying to come up with nutritious and tasty meals that the whole family will eat is no easy task, throw in a toddler’s often fussy palate, and it can be a real nightmare getting these little people not only to eat but to eat well. 

Our go-to is these chicken meatballs, not only do they taste delicious but also you can cook them, then freeze them and simply take out as few or as many as you need, zap them in the microwave and hey presto dinner is served! 

Here’s what you will need: 

250 grams of ground chicken breast

1 cup of breadcrumbs or almond meal if you are opting sans gluten 

1 cup of grated Zucchini 

1 Red bell pepper chopped finely 

1 tablespoon of pesto 

Coconut oil 

Salt & pepper to taste 

Note: You can be creative with adding various veggies that you may have, I have used grated carrots before which work quite well.

In a bowl combine the ground mince, breadcrumbs or almond meal zucchini, pepper, and any other vegetables along with the pesto and salt and pepper. Combine well until you have a good consistency. If it feels to wet to roll into ball shapes, add more breadcrumbs or almond meal until they are easily pliable. 

In a pan, heat some coconut oil, the amount you use will be up to your personal preference. Roll the mixture into balls and then place them in the pan, letting them brown from the outside.  Once brown, turn the heat down and place a lid on the pan for them to cook through, turning them over often. 

Once cooked through, place them on a rack to cool or serve immediately. We suggest pairing these with pasta and a tomato-based sauce. For a straightforward option, serve with ketchup! 

To freeze these once cooled place the meatballs on baking paper between them so that they will be easily removed as and when you need them. These can last in the freezer for up to 3 months.
